In the Kanto area, this is called shungiku (spring mum) that blooms in spring as opposed to chrysanthemums that bloom in the autumn. It is called kikuna (mum leaves) in Osaka because it is chrysanthemum with edible leaves. Osaka prefecture competes for first or second place in shungiku production in Japan. Among its varieties, the middle leaf type with thick and jagged edged leaves and leafy stalks are preferred in Kanto, while the middle leaf type with spreading roots is common in Osaka. This type is shipped out with roots intact for good freshness retention.
