Shokudo Hasegawa

A renowned spot for Kitakata ramen, one of Japan’s three major ramen styles. Its ultra-high-hydration chewy noodles, blended with flavorful Hokkaido wheat “Kitahonami,” pair with a clean, straightforward broth made with Date chicken, aokuchi niboshi, kelp, and aromatic vegetables. It has earned overwhelming support from locals. Their “new Kitakata ramen” selections, such as tsukemen and maze-men, are also appealing.
